Bio
Driven by an early passion for ethical food systems, Sam Suchoff began his culinary career at Lantern and Neal’s Deli, learning to balance the economic realities of food service with a commitment to sustainable, pasture-raised meats. In 2019, he opened The Pig – an order-at-the-counter joint built on sourcing whole hogs exclusively from the North Carolina Natural Hog Growers Association. This direct farm-to-restaurant relationship has enabled The Pig to scale from two to twenty pigs a week while launching successful retail lines and award-winning cured meats under the Lady Edison brand. You can find signature offerings like Lady Edison Extra Fancy Country Ham on the menus of top restaurants from Los Angeles to New York, or you can swing by the Saturday Carrboro Farmers’ Market where Sam slings his homemade hotdogs as well as packs of ham and other pasture-raised piggy treats.
